About the event

This is a one-hour webinar that provides the participants the opportunity to learn more about the e-Safefood project, its e-learning platform, and the modelling of cross contamination.

The e-SafeFood project aims at developing an interactive e-training program, full of user-tailored pedagogical material about microbiological food risks. On the 19th June 2023, the first webinar took place about the new societal challenges related to microbiological safety.

For this second webinar, the importance of cross-contamination as source of foodborne disease, and the types of cross-contamination models taken as modules of quantitative risk assessments are discussed. Finally, the tutor will demonstrate the programming of a cross-contamination model in the R software.

Overview

  1. Introduction to the e-Safefood project, Wilfried Paget - ACTIA (10 minutes)

  2. Presentation of the ISEKI Moodle platform and its access for the training unit, Louis Mayor – ISEKI (5 minutes)

  3. Focus on the modelling of Cross Contamination, Ursula Gonzales-Barron - Centro de Investigação de Montanha (CIMO), Instituto Politécnico de Bragança (IPB), Portugal (30 minutes)

Content

  • Cross-contamination in food processing

  • Types of cross-contamination models

  • Factors affecting cross-contamination

  • A cross-contamination model in R

  • Q&A session (15 minutes)
